Bit of an odd one to me... I seem to be losing coolant but have no idea why or where from...
It is also not consistent loss... I noticed the light was on so checked and the coolant tank was practically empty... filled it up and have driven 25miles and all good so far...
Any ideas / suggestions?

Check the hose and connection under the coolant tank also check the tank for any hairline cracks.
All these hose have a tendency to shrink, perish and start to leak. If you can't find the leak you can buy a UV dye to put through the system.

also worth checking your heater valve isn't leaking

also check the water pump hose that could be catching on the fan and made a hole .

Indeed, i should have said heater valve and matrix.
