I cant be arsed to mod the arches yet, will trim them and roll the lip properly another time, but for now, is this likely to catch on hard corners?

This is with the spring removed and the wheel lifted, in reality the wheel isnt going to lift that high, the gap is just over 10mm

Erm yes by the looks of the pics, if you "Bottom" out anywhere, you fook up the tyre.

Should be safe. Although under hard use there is enough give in the rear beam and rubber bushes to cause 10mm of movement, its unlikely that the inside wheel would be loaded enough to push the wheel that high in the arch unless the car is run very low.

Its not low at all, that was with the arm lifted right up to the adjustable spring seat, with the spring in it wouldnt go that high.

Under cornering, would the gap get bigger or smaller?

modding the arches is easy, heat gun the paint not to hot but not to cool you need the paint to be plyable, rubber mallet and gently bend the lip up, easy peasy and not difficult at all
i waxoyled the crap out of mine before i did this though

tbh the best way to find out if they are going to rub, is go and try it

Get a larger man to jump on the back and see how much effort it takes to get the back as low down as possible. If the arches do catch, its a track car - get ghetto!
