Long trip tomorrow in the heat: can I overtop coolant/oil?

Folks, as above, as I've not posted a daft question for some time...
On a long trip tomorrow and it's going to be hot. I'm wondering if I can overfill the oil and coolant?
Or will this cause other problems? What's the worst that can happen if I have too much of either?
(Was going to post in technical, but it barely qualifies!!!)

Two headblenders, couple of bags of MC Hammer, 5 litres of FFF, a 48ft bastard, a box of jumped-up custard and some soggy chimps
No don't overfill, just take spares of both.
Too much oil can create too much pressure, blowing a seal is a possibility. Too much water will just leak out.

Why would you want to overfill anything? would you overfill a bath? would you overfill a kettle? why on earth would you want to overfill it?
