I understand its the brown/ violet wire i need to be using but does it still need to run to the original sensor as well as the e30 one.

No, the M52 sensor is kept to send the temp to the ECU only.
You add the E30 brown temp sensor for the temp gauge - you will need to run the brown/violet wire from the C101 Pin4 to the E30 sensor.
