is there a better version of the m30 thats easyer to swap than others if so which car i'm looking at 5 series and 7 series so far.

the best version is the more modern m30 due to the sump and it doesnt have the coolant pipe at back of engine near bulkhead.
Your best of with an e34 535i manual also these are more available than a 7 series.
If you do go for the modern m30 i can supply the mounts www.e30.de copies for 100 pound plus postage de ones are about 150 pound.

agreed, the later one is the easiest to use. E32 735i and E34 535i are the cars to look for. one point to emember though, a manual E34 will probably have been spanked a lot more in it's life than an auto E32. that said, you'll need to get a manual gearbox, flywheel, clutch and donor prop (unless you find a E30 M3 one)
i spent £100 on a 98k fsh E32 735i auto for a sweeet engine then another £400ish on a gearbox, M3 prop, flywheel and new clutch. the loom, ecu etc from an auto can all be used with no problems whatsoever.
