Anyone know how the 2 folding back pieces come out of a touring rear seat? I can see how the base and side pieces un-clip, just not sure about the rear folding bits.

Yes!

Do you want to take out the whole metal frame complete, or just the fabric bits?

Get hold of the sides at the bottom at the front and pull, then slide upwards.
The metal clips that hold the bottom are very sharp, and you WILL shred your finger tips.

Thanks Brian.

Does that leave the whole back of the seats still attached to the car?

That leaves all the metal work attached to the car.
To remove this, look along the length of metal between the hinge points for the seat backs. Just in from the ends you will see two strips of spring steel. Pull out the free ends slightly, and lift the whole frame upwards a few mm at the same time to unhook it from the car.
Easy and obvious when you know how, but I'll confess that I couldn't see how the first time I did it!
