Jetting will be hard work dude, thoe carbs are used to supplying shedloads of fuel to engines @ 1300oK rpms, the M10 can wail some high rpms , but not that high 
use some later GSXR600 Throttle bodies and a standalone ECU setup,, jets for bike carbs are a fortune, for my Flatslides I spent over £500 on jets and tuning, I'm gonna EFI it this year with a MicroSquirt ECU setup and some SP1 TB's

Jaymic used to do a twin sidedraught (Mikuni?) carb kit for the M10 that were basically Japanese 40DCOE Webers.

i have seen old amal carbs used on a mini, but having 4 individual carbs to adjust is a bit of a pain in the arse.

if its a 6cyl run a set of triple webers ran same set up on my tr6 went from 150 bhp to 210bhp its like a different car now thirsty but worth it

Unless you could get them really cheap, I can't think of any good reason to buy Webers over throttle bodies, and carbs are still pretty primitive compared to EFI regardless of where they come from.
Then again, I'm biased.
Be interested to hear more about the TR6 setup though, a 60bhp gain through fueling alone sounds pretty impressive!

the good thing about Mikuni carbs is that once set, they stay set. Also, they are light,and compact and as they are joined to the custom made aluminium manifold by jubilee clips, they are easy to pull off and rejet during the initial setup stages. I have yet to dyno mine but the throttle response is great and they sound good too! I am waiting for my 292 degree cam as Dibilas sent me a clockwise cam instead of anticlockwise. But I would think, based on seat of the pants calculations, that I have an extra 20 bhp (even though I know the carbs are running way rich) . the car is quicker that my e30 320i, though that isn't saying much! But it's a vast improvement over the standard 90 bhp. the next step is to get hold of a 2002 bottom end and use my current big valve head on that with the same carb/cam setup, similar setups in the states show outputs of about 150-170bhp and while I know that the US bhp figures are not rated the same as ours, most of their cars run the low compression head/piston setups due to the emmisions laws. Bogg Bros do a complete carb and custom made (very nice too!) manifold for about £360.00 which is peanut compared to Megasquirt and EFI. For around £500 they will dyno the car as well. On top of this it looks the bollocks!
