Undo what you did until the guages work again then put it back in properly.

I'd start with the tacho sensor wire on the alarm sound like you got it mixed up with one of the outputs.

Well you've got me stumped. But if you de-solder the internal battery they are sensitive to heat and if you hold the soldering iron on them too long you ruin them. The best thing to do is strip the unit and remove the circuit board and let it drain or place a load across it to speed it up as it can hold a charge for weeks.
If you have a motronic management system there is a white plug on the front below the temperature guage that is specific to the angine size, if you have the wrong one all the dials work incorrectly. But if it worked before you fitted the alarm then the best thing to do is pull it out and start again and make sure you have an accurate wiring diagram for that year of car. The haynes one is not bad but not 100%.
Did you link any of the alarm output's to the headlights?
Do you know it's a good (working) alarm?
What fuse did you blow?

That was the only other thought i had was a bad earth under the dash somewhere.
When you say you dissconected all the harnesses Do you mean you just un-plugged them from the alarm?
If so check all terminals for the voltage if the eqipment it should be connected to.
Happy hunting
