I am utterly useless at this and wondering if anyone can help out

320i head
oem gasket
eta block/crank/pistons and rods

i have been told
"9.0:1 with stock head gasket. 731 is the same casting as the eta head"

is this true?

731 is NOT the same casting but may have the same head volume,
With great challenges comes great engineering.

It depends on the year of the eta block. Early about 11:1, late 10.2:1

is there a way to tell - engine code is rusted away though the block does have the casting numbers -

I think early ones have a big core plug at the rear of the block near the flywheel.

There are slight differences in piston shape aswell, I can't remember which are which though. Try a search.
