engine swap on a e30 325 touring.

Have a 90 spec 325 touring that I want to put in a bigger engine.

What is the best ( practical ) engine swap?

Is there a reputable company that is going to do a good job and not rip me off?

What sort of costs am I going to get?

Ideas I have are e36 M3 engine, 3.5 litre, newish 3.0.

S50 swap is good or S38 is nice aswell but not as practical as engines probly hard to find and harder to fit
