Car was serviced last week and runs fine but whenever I drive her hard briefly, like when overtaking or when i'm p*ssed off the coolant light comes on.

Why is that?? Is the consul lying?

Usual cause of this is the float mechanism in the washer bottle partly turned on its side.

Check the connector is on the coolant tank properly.
May be just a failing sensor. Water eventually gets into the centre stem and corrodes the thin wires to the reed switch.
Cheap and easy to replace, but make sure you get the right one. There are two versions and they are a slightly different length. More importantly, they work in opposite ways.
