I'm no expert but from other posts it seems you should check the floor infront of the driver and front passenger.

Anywhere...

If you are stripping down the car, then it's the ideal opportunity to give the car a going over.

Check the inside of the boot above the rear lights. All of the e30's I have owned have started to develop rust there.

. . . and below the rear towing eye. You often see blisters underneath the underseal.

front bulkhead, up behind glovebox area/ behind fusebox under bonnet

front & rear footwells, under rear seat, if the car has Mtec kit then the kit could be holding the car together. If you have a sunroof, check the drain channels are not blocked. jacking points (get rid of 'em and plate 'em up if they are grotty.

in the drain channel for the boot lid just under the rear window (and lift the rubber seal, water collects there, also check underneath where the bootlid hinges are, my uk E30 rusted through there and the hinge fell off

bottom of doors is a drain they also rust a bit there as the drain becomes plugged and water collects in the door skin, even my cab in 50C sunshine weather rusted a bit there, its never seen rain!!
