Im getting a judder when accelerating, basically when the car is under load - goes after you reach 30/40 mph.

Not sure what it could be, ive had new driveshafts and prop shaft coupler.

Havent had it looked at yet but would like to know what to look at out for.

Anybody check the centre bearing mount? Common problem, and the first thing I'd look at for what you describe.
The bush that the front of the propshaft locates into could be damaged if the rubber coupler (giubo) was left damaged too long.

Has the prop shaft been messed with and possibly put out of balance?

The guibo was recently replaced, could explain it.

Will have it checked to see if its the case, does make a rattly sound when I initially drive it.

Not sure on the balance but it's been removed for the guibo replacement, not sure if that takes it out of balance?

Propshaft will only be out of balance if it's been split into two halves and assembled incorrectly. You wouldn't normally split it just to change the giubo, although you would have the opportunity to do so.
Did whoever changed the giubo know that it must be fitted so that the arrows embossed around the outside must point at the spider that it is bolted to?
Check the centre bearing mount. Not the bearing itself, but the rubber sheet that it is mounted in. Also, the mount will have been unbolted to have changed the giubo, and needs to be forced forwards a small amount before the fixing bolts are finally tightened, to preload the rubber mount.
