Took out the e30 today for a drive for about 30mins I came back and left it larked for a hour or so and when I got back in and drove off I really struggled to stop it as the pedal was rock hard and very difficult to stop the car....
Any ideas as to what can cause this?

Sounds like servo has gone, so no assistance on the brake brake pedal.
Try pressing the brakes with the engine off the while keeping the pedal down turn on the engine. The pedal should compress some more. Also do you get a air sucking noise when the pedal is repeatedly pressed.

You could check all connections from the servo to the inlet manifold just to see they are all good ?

Yes rock hard with the engine off too... in fact it doesn’t make any difference once the car is started at all.
I’ve checked all the connections nothing obvious there..

From your description I would say the servo is not working at all.
