Hello, does anybody know if you can buy a harness bar for the E30 ? Or is it a custom thing i have to make? Would it be worth just getting a rear cage?

You won`t need this, if you have bolts going together with 4 point harness, you can fit them were original harness is in the rear, for the side one you can use seat brackets if you are going with bucket seats.

Using the rear seat belt points for a harness is not a good idea as the angle is too steep and can cause back injuries. To fit harnesses properly (otherwise what is the point) you need to have a 6 point cage fitted.
