Are you looking for a proper 4WD course slow up a and down the hills and the mud or something more adventurous?
I think a course in the snow would be fun,

I'm doing a decent amount of 4WD driving on sand in Africa these days, but would love to do a proper hardcore 4WD course and learn how to do rocks, mud, use high lift jacks, etc.

You could do the Advanced Land Rover course but for what you are looking for I think its more advanced then there advanced course, you want a course along the lines of "I am really in the shit how do I get out of it" type of thing.
Thats a tuff one.
