Well I got a call from the machine shop today. The steel-lined M52 block I was going to use for my rebuild has water marks in the bores and needs a re-bore really - more than oversize rings could take care of. I don't fancy forking out a grand or more for oversize pistons...so I guess my best option is to source another block?
Is an M52B25/B28TU block usable for a single VANOS M52? These seem to crop up fairly often. I suppose my only other options are to consider the nikasil lined block I've got napping under my bench or rip out and strip down the engine currently sitting in the car...

I have now...just been down the shop to check it out.
Engineer says wear is 0.07 - 0.075 mm difference between the top and bottom bore diameters.

Yep. That's pretty much what the shop said too. Would probably be okay, but might burn some oil, might wear rings faster, better to do it once & do it right.
Going to try and source another block. Failing that will tear apart the engine currently in service in the E30. At the very least, I know that doesn't use any oil
