Need a set for a LHD but not sure on how I would be able to tell the difference, both would look identical to the untrained eye I guess

Does anyone know what the difference is in LHD & RHD e30 mirrors?

Study the angle of the glass, relative to the mounting flange on a pair of RH drive mirrors. The LH mirror is at a different angle to that of the RH, so that both mirrors give a view down the side of the car when viewed from the driver's seat.
The mirrors for LH drive cars have the same difference between LH and RH, but the other way around.
The mirrors for LH drive cars have the same difference between LH and RH, but the other way around.

Surely a RHD pair of mirror can just be adjusted to suit a LHD car?

Easily checked by sitting in the passenger seat of an E30, and seeing if you can adjust the mirrors enough.

i have left hand drive mirrors on my granite sport.....trust me a nightmare on the motorway when switching lines
i suppose off the car its very difficult to tell if they are RHD or LHD.
on the car you can tell right away ...they are irritatingly awkward to use even when fully adjusted to where you think they should be...

As Brain has written,the difference is in the mounting base.One of the reasons for no MoT on my ex LHD touring some years ago was 'inadequate view from exterior mirror'
