Can someone help me with this one please? I don't know where these hoses need to go to..

Looks like you still have the heater valve in there, the heater valve is inside the cabin on an E30 so that engine bay one needs removing.
The hose from the back of the head needs connecting to the lower heater stub on the bulkhead, the top stub needs connecting to the rubber hose/manifold you have the red arrow pointing to

1. goes to the upper stub
2. to the lower stub
3. leave it like that with the screw inside

3 need to go to the expansion tank, the small hose next to it is what you usually blank off as its for the throttle heater
