Are all dashboards the same and therefore interchangeable?

Do you mean dash or instrument cluster?
The most obvious differences in dashboards is that some are LH drive, and some are RH drive, but apart from that, they are interchangeable, apart from if you fit a saloon dash to a cab., a small section that doesn't show will need to be cut away to clear an extra bit of metalwork.

I mean the dash, thanks for the information Brian I have a convertible so very useful to know. Where abouts will I need to cut?
