I am going to flush my power steering this weekend as I put in a second hand unit 4 weeks ago. I will take the lower banjo bolt out and let it drain for 15 mins. I will then run about 500ml of ATF 3 to flush out any goop. I will then bolt it up and refill. Anything else I should do?

Read the wiki, there is a good guide on it, I used it too!
Get new crush washers for the banjo bolt (on both sides) m16 in size copper or aluminium is good to use.
torque banjo bolts to 40nm any less seems to leak
Think dextron ATF 2 is standard spec PAS fluid....

Turn the rack from full lock to full lock a few times to empty it, and you'll have to flush it more than once to do the job properly. ATF is cheap!
Dextron 2 was the original oil, but Dextron 3 is the upgraded modern spec., and is backwardly compatible.

How much power steering fluid is needed to complete the flush and have a full reservoir?

As much as it needs to get the fluid in the bottle cherry red, and to stay that way.
I wouldn't start the job without having at least 3 litres to hand.
