which diff better for e30 with e34 520i transmission box?

difficult to choose between diff ratio 3.64 or 3.73 as I have not experience.

and my e30 will use e34 520i that in the wikizone it called near sport box or all round box.

3:64 gives 73mph at 3000rpm

I have not used a 3:73 myself,so cannot quote you an exact fiqure,but it will be around 70mph at 3000rpm.
