I will need to bite the bullet and fit a new head gasket. It is leaking oil to the outside of the motor. Does the fan and water pump have to come off when I remove the head? I have an early 323i with the acorn head stud tops, is there a better alternative to these that I should fit when putting it back together? I will get the head skimmed. The place I use does that ultra sonic dip cleaning process. Anyone used it? Is it worthwhile?

No,fan and water pump can stay on the engine.
Use the torx headed stretch bolts when re-building and follow the fitting instructions that will come with them to the letter.
Having the casting cleaned properly is always a good idea, and of course a skim is a must. Also carefully clean the top face of the block, trying not to let any rubbish drop down the water jacket!
I would expect that your oil leak is the pressure feed to the head, difficult to keep it fully oil-tight.
