I have replaced the exhaust manifold seals and the seal between the manifold and the downpipe. I can still here a bit of a blow. Is there anyway to pinpoint where the leak is? I have got a feeling the new gasket between the manifold and the downpipe is faulty.

Put a damp cloth overr the end of the exhaust (held in place with a bit of string/rubber band) & with the engine running have a look underneath & you should be able to see where it's blowing.
if it's got t*ts or wheels it's bound to be trouble...............prove me wrong.

The cast manifold does seem to warp with age, this is what causes the studs to break,so it may be an
to have it's mating surface ground flat.

I have a spare manifold off of a later e30. It has the four stud downpipe connection and none of the emmision reducing pipes. Can these be used as a replacement?

The manifold will fit the engine (check that it's flat first), but check that it'll bolt to your downpipes.
