Only extra bit you might want to keep from an E36 is the steering rack.
Loom is dead easy to modify (basically cut the E36 plug off of the end and splice an E30 one in its place), but for those who don't fancy this easy job DanThe on here will do the job for you.
He can also disable EWS, but if you have the whole donor car, why would you want to?
Standard brake servo can be used if you move it over a bit, or the preferred choice for a smaller diameter one is one from a plastic winged Clio.

Electric fan wise i'm using a 14" ebay one dan recommended (also using his auto fan loom), works perfectly, no problems sat in traffic at all

You can use the E36 fan from the donor, the cowling just needs some hacking about and you need to make some little brackets to bolt it to standard holes in the E30 front panel.
Two-speed temp switch is used for the fan, screws into the side of the rad. If you use an 80-degree thermostat, I think it's an 80/88 degree switch, I forget. Someone will no doubt confirm that.
Don't forget if you're using the EWS from the donor, you need the key (chip can be removed and put into an E30 torch key), the transponder ring from around the ignition barrel, the ECU and the EWS control box.

Factory finish that loom Dan, you know if you covered it in silicon or bumper gel you could get at least another £20 for them
