Can I get away with this or do I have to sort it? I used some gasket sealant when putting it back together and am hoping this will be ok.

I'd be getting it out. Perhaps you won't have much of a leak but take no risks with sump bolts. You could get it out in situ without removing the sump.

The engine's on a pallet so I guess it can't get any easier, I'm just fed up with dicking around with it and want to put it in!
How should I tackle it, bearing in mind there is none of the shaft visible?

I'd use an easy out. Worst case it snaps onto the bolt thread, then as the engine is on a pallet, fitting another sump is a piece of cake.

Alternatively could you get in to weld another bolt onto to it ?

Nothing to weld a bolt to unfortunately. What's an easy out?

I had a E30 sump bolt snap once, I was able to use a hammer and punch to rotate it out
