Revs dropping on throttle.. m20b25 (video attached)

Hi all,

New to e30s so I'm still doing a lot of reading! I'm finding that light or quick throttle to the engine causes the revs to drop rather than rise. This does seem to be worse when cold and I'm wondering what to look out for? I've checked the blue temp sensor hot and cold and the readings aren't coming out right.. but could this be the only cause of my issue? Would an air/vacuum leak cause this?

The car is a 1991 325i, standard engine on 110k, just been fully serviced 200 miles ago.

Here's a video of what I'm seeing. The engine was cold.
Towards the end of the video when I push the throttle a lot, it sounds like it's causing it to miss a bit too?

AFM either not moving the flap easy enough or carbon track worn away.
