Diff does have a wine
But could this be down to needing the axle and railing arm bushes replaced? Look warn cracked
Rear steps out very easily
Also have a rear strut brace fitted
Car did this when I got it before changing a few of the above but seems worse now had it 10 months

I'm a bit like your diff,I like a glass or three of wine...
On a more serious note, have you checked the four diff mounting bolts?
If these are loose, you will get a knock from your rear...

What about the diff bush and 2 rear subframe bushes in front of each rearwheel, have they been replaced?
Otherwise that is a normal place for an E30 to wear out. Where I come from the MOT guys allways start at the rear subframe bushes, it's very easy for the trained eye to see if they're gone. (I don't have an example right now). But if you talk to someone who knows the problem then they can show you.
The trailing arm bushes, I have never seen one that is bad, sure they might look cracked etc. but usually they are fine. But if the other stuff doesn't do the job.
The diff can also be very worn and have considerable play in it.

Why is there not enough time to do it right, but allways enough time to fix the errors - I borrowed that, just so reallistic in my line of work.
