These switches, never had one before so not to sure how they are wired/work , can anyone explain, and are they functional with any head unit does it "fade" and allow for balance ajust or just more like a front/rear cut off ? (i presume its just speakers wired through it ? but then how does it properly fade if so ? like a stereo functio does, or does it just cut power to the speakers )

also what is a switch that has the same sort of dial on it, but like a little clock/speedo looking thing at one end and nothing at the other ?

edit, found it.. , says dash light dim switch ? dont recall seeing this before in an e30 ? can anyone shed any light on it ? (lol)

The dash light dim is part of your headlight switch. Twist it.

I wouldn't recommend using it; they are potentiometers (variable resistors) and are likely to induce crackle noise into your system - you're better off using the built-in faders in most modern stereos.

As above, just use it to look pretty on the dash, but don't wire it in, they're crap. :D

I know that, hence wondering what that switch was, click the link and see what it looks like, got one in a few odd bits but never seen one before, or is it a very early e30 or non e30 switch ?

That's not an E30 switch, the seller just doesn't know what they're on about.
