In the process of restoring an e30 325 mtech 1,it's going to be for road and track with a 328 m52,considering putting the fuel tank in the boot,if anyone has done this or can give advice would be much appreciated!
Cheers Tom

As far as weight distribution where a track car is concerned, the OEM tank is far superior.
Oh and welcome along

The oem position sits between the axles with a rear bias, it's where it wants to be . . . .
Move it into the boot and not only do you have rear impact issues (might not get past certain track regs unless it's a true racing fuel cell) and you'll shift the weight distro further back with more dynamic change as it empties.
Start of your session with 40 odd litres on board will feel a hell of a lot different from 5 litres at the end . . . .
Whilst keeping it in the middle will negate some of the that effect whilst all you got to worry about is the actual weight rather than any dynamic effect it as on the handling.

What everyone else has said makes alot of sense , i have put mine in the boot (not done yet) because im am using my car for drag racing ,I have used 12 gallon foam filled Jaz fuel cell cost around £160 and fits well in the spare wheel well ,for your use i would say keep the oem one
