My 318 cab has standard steel wheels; if I swap to BBS alloys, is there an appreciable difference in the ride between 14" and 15" ?

it will handle better due to the smaller tyre wall .

Having swapped from 14" BBS to 15" Fondmetal wheels on my cab I can't say I really noticed any difference at all.
