Poly's NOT recommended. But here's your guide:

'vert' is an E36/46 term,E30's are cabbies!
I use poly bushes on the trailing arms, but rubber on the axle carrier.Poly axle carrier bushes will alter the way the car handles and rides.
I have used both rubber and poly bushes for the diff, and can detect no difference between the two.

Can the diff come down with the rear beam or does the diff have to come out first?
At the moment the the beam is undone and so is the diff mount but the beam seems to be stuck to the body. Any suggestions?

The diff is best removed first,as it un-balances the axle carrier, causing it to try to twist on it's pins.
I would suggest that you support the car under the axle carrier whilst you unbolt the diff,as those diff mounting bolts will be at FT torque if the diff has not been out before!Access is difficult, but a 19mm combination spanner linked to a second one and both feet on the second spanner does it for me.
I would expect that the beam is stuck by corrosion between the mounting pins/bush centre/body mount.Belt the pins back up into the car,on a cabbie you will need to remove the rear seat and the sidecards to recover/re-fit them.
Then with the diff out of the way,you can insert a extension bar up the bush centre and belt it from side to side to free it.Some zoner's suggest using a hole cutter on the remaining rubber bush to weaken it.What ever you use,it can be a proper pig of a job.
Going back,I find it easier to mount the beam, then the diff, and the trailing arms last.

Cheers Daimlerman, the diff and beam are now on the floor. Now it's bush changing time then tank down, new brake and fuel lines and handbrake cables.

Pleased to see that you are doing a full and complete re-furb.
Every 6 months or so,slide under the rear end and check the diff mounting bolts for tightness. There are several recorded cases of these bolts working loose.Working at home,on the drive with limited access,it's impossible to torque these bolts down,so we pull 'em up as tight as possible and they still have a tendency to slack off,so go back twice a year!
