The 318is pump I have in a 55l tank has expired and I'm weighing up my replacement options, and there seems to be more 325i/320i pumps available.

I am aware the fuel pump assemblies for 63l or 55l tanks are different, and that there are single / double pipe variants, but is it possible to swap the pump component from one type to another?

Another option is to buy a new pump, Walbro or similar, but there seems to be a little more to fitting one of these.

Yes, it´s easy to change only pump component. Only differences are those single/douple pipes, but the pump is same.
Easy job, you can do it.

You will see that the single pipe pump assembly is actually fitted with the second pipe, but it is cut off flush at the top of the frame and capped over.
