How do get the cam sprocket off without spinning the cam? I have already removed the belt, tensioner and water pump.

i would suggest setting the engine to top dead centre.. get a drill bit to fit inside the locking pin inside the cam... im not 100% sure but i believe the cam is held on by firction on these... bmw do suggest a bmw locking tool but a drill bit which secures in the lug will be fine

First of all, ensure the crank timing mark is about 30 degrees before or after the fixed mark on the timing cover. This will put all the pistons part way down their bores, and safe from any valve contact.
To hold the cam pulley, take the old belt, wrap it completely around the pulley, and clamp it there with a pair of mole grips, like this: O< , where O is the pulley with belt and < is the grips.
