Car was booked in for mot this morning as ive been working on it for 2 months ! So im a little gutted now.

Are they still seized? If so, the first part of the diagnosis is to slacken the bleed valves on the callipers and to see if that releases them.
Do you have ABS?
Has any of this 'work' been on the brake linkage or servo?

Hi,ive recently changed the heater matrix this did involve taking off the servo mounting bracket, but im 100% sure that I didnt mess with the adjustment on that rod as I left the locking nut on.

I have been around the block a couple of times since and all was fine.

Last night was just a pre mot shakedown of about 5 miles if that.

Seems rather too much of a coincidence to not be relevant!
Rod should be adjusted to leave just a small amount of upward free play in the brake pedal. If the adjustment is too tight, and pushes the servo push rod in at all, then the brakes will lock on.
