2.8 build which head ????

hi all , in the process of getting all the bits for my2.8 build ,just wanting to know what the best combination of head to use an 855 /731 and what cam's can be used to uprate them ,and on that note im still after the con rods

885 head

Cam is your choice but around 272/272 is frequently claimed by a few to be the best all round choice. Others like goosiegander have used slightly higher lift ones.

Head choice should be ruled by piston selection.
All 2.8's built to date seem to have used 325i pistons/885 head.

i would go 885 unless you spend alot of coin to get the 731 to flow like the 885 which requires oversize valves for the 731 as a minimum. A 731 head with the same flow as a 885 usually would have smaller ports for the same flow which keeps the port velocity higher.
E30 325is with M20B31

i've still got the m50 rods here, exactly the same size as M20 ones, if a touch lighter
