According to Dips, payment on the day is not an option if you want to go on the stand, as per your quote above.

Tickets for the stand are only £5, so half price...

Stated on their "club booking" page
"If your club would like to take part you should complete and return the entry form.
There will be a minimum charitable contribution of £5 per vehicle entered."

you can buy on the day but thats only to come in and park in the car park and NOT in the main area

you have to let Gortour know and pay him within the time he chooses the deadline ,he will pay in 1 block payment for everyone ,you will also need to send Gortour a S A E for him to either post the ticket and display pass to you
