Whats the best head to fit on a 2.7?

If it early pistons from a 325i then a 325i head no machining of the head required, if its an eta bottom end then the 320i head, with the latter the valves and port sizes of the 325i would be an advantage.

Yes the 325i is the one you need, the machining needs to be done to the block. It needs a skim of about 1.5mm. You will then need a vernier cam sprocket to time the cam correctly as it will now be wrong because the two wheels that the cambelt runs on are closer together.
