I'm running a M52 engine and Box.

Car currently has a standard 318 manual diff no idea of the ratio,

Would a 3.07 be ok?

I've been offered one for a M535 (I am aware you have to swap over the back plate)

Thanks in advance.

All M535i have large case 3.07 LSD's. E28 525e come with a 3.07 open diff as standard. Medium case differentials only found on the E28 520, 525i, 525e and 528i.

528i with a dogleg box have 3.25:1 LSD. 2.93:1 and 2.73:1 diff are available from the U.S and Germany from E28 525e/528e car with a manual box.
