why bother at the back, get it set to the height you want and use the fronts to get the desired rake.
afterall coilovers are not for slamming you car to the floor, there designed to allow you to adjust the weight over each wheel to enable you to get the required rake and wedge on the chassis.
the other advantage is the standardised smaller diameter spring, something which is of no advantage on the rear of an e30.
also i question if the rear damper mount top AND BOTTOM can take the abuse in the long term on a road car.
personally i wouldnt want to risk it.

If thats aimed at me it would be usfull to have the height adjustable because i actually use my touring to carry things its not to ponce about in and some time when i have a bit of weight in the boot it would be nice to be able to heigher the rear end a bit. i know what you mean about weight in the back, having had an essex v6 in my boot.
is it possible to fit the caravan towing spacers to a beehive spring? if so thats a nice cheep solution.
