I thought I had read that the E36 ones could be a bit too big for a close to standard M20. Maybe with the pod and zone chip they would be ok? What Mustang are you talking about? I think the ones in the 4.6L (I think?) V8 Mustangs would be fairly big, although I guess that isn't heaps more per cylinder than a 2.7L 6 cylinder.
You can get yours ultrasonic cleaned which might help.

I haven't really got any performance parts on mine and the ones that I have are just general stuff. I have a custom made exhaust, springs from an Australian spring manufacturer, Koni dampers, bushes and camber plates from Australian company K-Mac, and a standalone Engine Management System instead of a chip or something. All probably not the best stuff but seems to work ok. The only thing that should have been difficult was my 4.1 LSD but luckily I went to a mechanic that knew where he could get the parts from the 2L Touring Car series they used to have here and he built them into my diff housing
. I imagine trying to find a Schrick camshaft or something would be a bit difficult, I did have a look for one a while ago without much luck. I guess with air freight and internet banking and stuff these days I could get parts from overseas.
Other parts are a bit harder, the general wreckers here don't usually have E30s, but I have just tried a German wrecking place here in Brisbane that seems to be ok and they are wrecking a few E30s so hopefully I'll be ok for a while.
