How hard would this be to do? (It’s for motor sport so I don't have to worry about carpets) I assume the relevant bits are pressed and blanked in the car? Is it just the gearbox, clutch and pedals needed? Is the loom different?

You'll need a prop, the auto' ones are shorter & I think a diff., if you do a search theres plenty of threads on this subject.

Im thinking it would make sense to put a shortshifter in too, whist its out. Is this an easyish job?

very easy it's just a matter of swapping the short shifter for the old one before fitting :D
