All of your suggestions are on the list, just a case of getting the cash together and then the epic task of finding a good set of black leathers for a Touring.
It's a 'big' birthday next year so gonna treat myself to a new Tech II from the dealer

Any suggestions on the best springs and dampers would be greatly appreciated.

springs and shocks depend on what you want to achieve? low rider,fast road use or just looks say? All of the above?

Repect to the guys, but that is a ground up re-build. The OP has a nice car that he want to slowly improve, not take it off the road for X amount of months.
The OP just wants a nice car that he is not going to thrash to bits or race it, just like me

I thought the touring barry used as a donor for his S50 was one of the nicest.
