I'm about to put my driveshaft back on my 325i

When replacing the centre bearing do i need to replace the dust guard as i didn't get one with my new centre bearing.

Also, how do i put the drive shaft back on with the gearbox and diff in already on the car, looks to be quite difficult.

When i removed it, i removed the whole rear end.

Drive shafts go from the diff to the rear hubs, so I assume it's the propshaft you're trying to fit.
It will go in (just) by dropping the centre bearing as low as it will go. Push the front spigot in first, and then just lift the middle up.
You can always loosen off the sleeve nut on the splined section and shorten it a bit more as well.
