Anyone know how I could run a harness and still fit people or stuff in the back seats of a Touring? I've looked but I don't think it's possible. I really want to fit my buckets but I don't want to lose the practicality whilst I'm at it.

It's one or the other I'm afraid - unless you keep the original seat belts. Harnesses need to be attached so that the upper straps are less than 45° from horizontal. A harness bar fitted between the rear top mounts would be fine, but would render the rear seats useless, especially as you'd have to remove the rear seat belts to fit it.

This is what you want, search on the net for "harness bars" - granted these ones are expensive, I seem to remember there was a group buy on some ages ago!

That's definitely the kind of thing I'm looking for.

I tried to get a group buy going on these, but Sparco in the states wouldn't ship them to the UK. They are really good and my mate has one fitted in his Subaru.
