The only E34s that are faster than a decent E30 325 are the 540 and the M5...The 535 may be a bit faster in a straight line, but slower overall...
You can get a reasonable 540 manual...perhaps even a six-speed one...for under £2k (one for sale here: http://forum.bmw5.co.uk/viewtopic.php?f=7&t=33349)
However, E28 528s and M535is are both faster than an E30...and you may find a non-rusty one for your budget.
E32 7 series are almost identical mechanically to the E34s...electrically, too and can be cheaper...but most 8cyl 7s are autos and not as quick as the E30, again...

^ that 540i in the link is low on compression on all cylinders. So I think I'll leave that one.
I have had a go with a friends mum
in a 728i, I was in my tech1 325i and I couldn't get in front of her in 3 straight line drags from 30 up to 100. They go surprisingly well it seems.
