Horses for courses really, the cost of skimming and pressure checking the new (sic) head may seem a waste of money now but what cost is piece of mind as i'm sure you know the head is one of the main reasons of engine failures and if ( a big if ) the head wasn't removed correctly the head could have warped . At least you'll have a better idea of what you're putting back .I know what i would do

Get a straight edge and that will help you judge whether its warped.

Cylinder heads only need to be skimmed if they are warped or the mating surface is damaged according to my local engine specialist.

Good idea to have it checked for cracks though.
