RMs are 2 piece, and as you mention, the lips can be changed for a wider/narrower version. ET is measured from the centerline of the wheel, so changing the lips to a wider/narrower version will change the overall width of the wheel, thus changing the centerline, which in turn changes the ET.

If I am doing the quick math correctly, you'd need 3" and 3.5" lips to get that width with those wheels and I dont think you'll have the clearance to the wing to run that wide of a lip on an e30

No, the original lip is 1/2", so you'll need 2" front lips, and 2 1/2 rears, or you'll need to roll and flare the rear arches.

8j and 8.5j personally I would not bother with rm's on a e30 as you will need to drop the car hard to pull a decent look off 16" is the minimum size IMO
