Is it easy enough to do and what kind of work is entailed in putting bike throttle boddies on a 325 e30 lump?
Also what sort of power increase could I expect and which bike would be the best donor?

Depending on whether or not the throttles have injector bosses.
That's the really difficult part, the next is getting the linkage to work nicely so that the car is easy to drive and not really on/off with the throttle.
Next up is a linkage which is easy to adjust and is stable/lets you adjust ONE throttle rather than 5 at a time.
And finally, you need an aftermarket engine management system to control the whole lot.
You can probably expect around 10% more power for all of your efforts, but razor sharp throttle response and the ability to use wiiiiild cams which can unlock further gains in power.

Do the 'busa ones have some ramps and things in the bore? That might explain the stumble off idle, but more likely is a throttle pot that's not been aligned properly or a TPS drive with some slack in it I'd have thought.

For the E30 I'd go for the Suzuki GSXR 600 ones(38mm)from the K1-K3 models as the ones from the larger bikes are a bit on the big side
The later K4 and newer are twin castings,as opposed to seperate units
These are the K2/K3 versions with the ecu controlled 2nd butterflies removed

Obviously not finished yet
They each need spaced 10mm apart and a new injector rail made to suit
Make sure you get the injector sub loom along with the TB's coz the connectors for the injectors are a bitch to get seperately
Altiss or Bogg Brothers can make up a manifold for them/extend the fingers/supply fuel rail/weld the spindle holes for the removed butterflies ETC
I plan on having a set of OE injectors fitted to the Altiss manifold as well as the OE Keihin's fitted to the TB's and all controlled by a DTA management system
