(First off, thanks to everyone for answering all of my paint/bodywork questions.)
When my car gets repainted, I'd like to have my grubby sunroof channels done as well. It'd be best to remove the sunroof rails to do the job right. Is it as simple as cranking the roof open, undoing the exposed screws along each side and lifting the rails out? ...Or will that cause some kind of horrible cable-related disaster? Any wisdom would be much appreciated.
(If it matters, the rusty sunroof panel will be removed and replaced at some point during the painting.)

Yes, just unscrew all the little screws that look like they may be relevant.
As long as you don't remove the motor when they're out, then the timing/synchronization will not be messed up.
Beware - some VERY sharp edges on the stainless steel guides.
